I'd also like to point out that I need an MMO that won't me make feel like its a job to play this game.

Is EVE pretty casual? Or is City of Heroes more casual?

Outside of the learning curve, I found EVE extremely casual. As I said earlier, you train skills whether youre online or not, so there is no grind.
There are no "raiding guilds" that demand a time requirement from you. Corporations ("guilds") are generally polite and casual, especially mining corps. Here is how my first week went:
Day 1: Spent an hour doing the tutorial, logged off. Logged back on, finished tutorial in another couple hours. Trained a couple skills. Logged off.
Day 2: Did the beginner missions and explored a bit. Read about mining and decided to head that route in terms of character development. Trained a couple more skills.
Day 3: Did some mining to make money, got recruited by a Corporation. Nice, talkative guild. Gave me a nice mining ship (Osprey), some skills to train, equipment, and a freighter for hauling ore.
Day 4: Participated in corporation mining run. Encountered pirates but was saved by corporation members. Despite my small ship and cargo bay, the corp paid in a time-basis so I got more than a fair share of ISK (money).
In short, EVE is a very casual, deep, laid-back MMO. Some might find it a bit boring, but I found it complex. Also, its easy to not pay attention. I often found myself alt-tabbing while I was mining an asteroid field, listening to music and posting on gamespot, then alt-tabbing back into the game.
