its good but since you dont want to spend to much
buy the gigabyte P35 DS3L for $80 on newegg its a great board and a great overclocker i highly recommend it
but then if i want to upgrade later would this be ok or should i buy a better one when i want to upgrade.
i will probably spend around $800-700. so i think it will be alright. also this will be my first build so i shouldn't buy anything to expensive just in case i mess up. if you mess up badly building you have no common sence, yet there are those no brainer times were you don't read directions and really mess up.

sli doesnt really imporve much performance 1 card is good enough
buy the gigiabyte mobo you wont regret it
I bought the 780i.
1. has pci-e 2.0 for the future dx10 .
2. will be compatible with penryn and future processor (more so that the 680i).
That being said you can get the 680i if money is tight. This board was my first choice! Sli boosts your gaming only a little bit right now, but developers are going to start coding for SLI and crossfire in the near future so you want to calculate that into your decision. I love my 780i. Check out the build here. The gigabyte is a nice board too, but no SLI then. The 780i OC's well as does the 680i.

PCI-E 2.0 has shown little improvement as of now. And the P35 is also Penryn comaptible. Best of all its $160 cheaper...I bought the 780i.
