Questions first. You guys think this will run a game like Crysis or Starcraft2 on high? Without overheating? Is there anything I'm missing? Will the motherboard fit in the case? Will all the parts be compatible with the Mobo?

motherboard + cpu = not booting = no starcraft ii = no crysis

You will need an AMD mobo with an AM3 socket for that Phenom II 965 cpu. The mobo you have listed there is an X58 mobo that is used with an Intel Core i7 9xx cpu. I would recommend a psu from Corsair, Antec, or PC Power & Cooling. Otherwise, everything looks good as far as gaming goes.

That mobo & PSU will do fine. You can switch to an i7 if you want but it will be more expensive. The AMD setup is a good rig for gaming. Unless you need all the extra bells & whistles of Win 7 Professional I would just go with Home Premium 64-bit OEM. As the Pro version won't offer anything different for gaming.

What about XP mode? Some games I wanna play run in XP. Or will it run those games fine anyway?

Get windows 7 pro. XP mode has been a lifesaver for me when it came to several older programs and even games that wouldn't load on windows 7.
