I'm looking to clear some desk clutter, but every wireless keyboard out there seems to be sold bundled with a mouse. I'm already looking to get a Logitech G7 Mouse, but I only need a basic, quality wireless keyboard.

Any suggestions?

This is the one I use. I would just keep the mouse in case of a lazy emergency while in bed or couch and you want to change your itunes.

That is a fine question, it is kind of hard to find keyboards without a mouse bundled with it. I just stick with wired mice (mouses?)and keyboards myself, better response time and I don't have to deal with batteries.
