It can actually hurt because having the latest drivers sometimes brings problems as well since they are just released and not as tested (and fixed) as older drivers.

I ran SLI setups for many years (7600GT, 8800 GTS 640MB, 8800 GTS 512MB, GTX 280, GTX 570 and even ran GTX 980Ti in SLI for about a year) and new driver releases are better (in my experience) at breaking things for SLI setups over a single card configuration. Also, not all drivers will function properly with all hardware configurations.
I learned that if the driver I'm using provides good performance in games and it isn't causing any issues, then stick with it. Only and ONLY if a brand new game comes out that requires new drivers for SLI support, then I upgrade to that driver.
Last time I actually upgraded a driver outside of swapping hardware or an OS re-install, was when Nvidia released their SLI driver for No Man's Sky.
Video drivers, I have a general rule to go by: if it isn't broke, don't fix it. In other words, if things are working fine, don't upgrade.
