Not many do. There's still a bunch of new games that are single threaded, or don't utilize multiple threads efficiently.

Civ V might be one fo the few that goes some way into tapping more than one thread. It uses multiple threads for AI, as well as multi-threaded rendering which is a DX 11 feature.

We need more games to take advanatge of multi-threaded DX 11 rendering. It taps multiple threads when working with the rendering pipeline, bringing huge improvements to performance.

Grand Theft Auto IV runs better on a quad-core than a dual-core if that counts (as did Need for Speed: Hot Pursuit and Call of Duty: Black Ops). GTA IV also needs 1.4GB of video memory to max out efficiently.

Dwarf Fortress is entirely CPU dependent and is the most advanced simulation game out there. http://www.bay12games.com/dwarves/

I never had any problems running GTA IV on my old C2D at 4.5GHz.>? BF3 and SC2 are the only games that I know of that max my CPU, though I do have a pretty big backlog of games to play...
