No offense but I think Eve Online is a pretty overwhelming game for a MMO beginner.

I'd actually suggest trying WoW, which is free to play for the first 20 levels. You can say what you want about WoW, but it is a very streamlined experience and excellent at introducing non-gamers to MMO's and their mechanics.

EvE was the first MMO I ever played and its quite simple. sure you need to read a few guides, but really i never see why so many say its so difficult.

Instead of EVE, if you like the theme, go for Black Prophecy, it's free and it's personally exactly what I wanted from EVE, like an X3 MMO, it just needs time to be polished enough. I never really got into EVE, don't see the appeal, 80 hours was all I could stand of it even if I had friends to play with that had monstrous ships and boosted me with various components and credits from missions. But WoW.

Anything that requires you to "read a few guides" is not beginner friendly, IMO

Lord of the Rings Online is pretty beginner-friendly, and it's also free. You can pay for membership or for some perks, but you don't have to, and the game does a pretty good job of not gimping free players too much, especially in early levels. Plus, you should be pretty familiar with the setting already. ;)

I used to like Yohoho! Puzzle Pirates, and I still do, but it's not as much fun to play as it used to be since there aren't many people online at a time any more. Go with a new one like TERA Online when that comes out, or if you want to try something older play Ragnarok Online.

But is the combat/gameplay anymore fun? Anything other then blocking and a cover system? Same old standard hot-key bashing?
