Need help running games on HDTV.

Because I run my PC on my HDTV, I need to be set at a particular resolution to stop the image from cutting off. For most games the image is cut off even if I set the same resolution in game. The only way to get games to fit the screen is to go into the install directory, use notepad to open the file where the game resolution is set, and set the resolution there to match the one on my desktop.

Sometime this file is hard to track down so I wanted to know if anyone had any advice. Such as where and what type of file I should search for. Or if there is a general way to set a games resolution like this.

That's the main question of this post. Any help would be greatly appreciated. Now, if you think you can solve my other big problem, the one that no forum on the net has managed to solve thus far, then please continue to read.

I am using a Nivida Geforce 8800 GTS. This computer was a "custom built" floor model at CompUSA. When I first got it I remember the Nivida control panel having 2 options. One option was to stretch/skew the image so that it fit the parameters of the screen. The other option was to set the resolution. Once you used the first option to set the screen parameters you could change the resolution to whatever you wanted, and everything fit on the screen, like with a standard monitor. After updating drivers, there is only a resize desktop option, and when you stretch/skew the image to fit the screen, it auto sets a resolution for you, and any other resolution will cause the image to be cut off.

Where the hell did that other option go? It let me set the boundaries of my screen so that everything, games included, would fit on it. If that function exists and it works then why don't I have it anymore? Is there some sort of program that I can download that would do the same thing; force everything on the PC to fit within preset parameters? Also, rolling back drivers did not seem to help.
