Well I'm getting 3 120mm LED case fans for my antec 300, and I wanted 2 to be intake and 1 to be exhaust, they are all the exact same fan brand and type so to make a fan intake air would I just install it backwards? Is that how it works?

On all fans, the side with the wires means that side is exhaust. You will install all your fans the same way. If you install one backwards, then two fans will be intaking and the third fan will be as well which will be messy.

Wait, I don't get it, so my case would be configured to know which way to make the fans spin?

here are the fans I'm using btw:

The side with the sticker is where the air blows out of and the side with no sticker is where the air goes into, it's the same on every fan.

So basically for my exhaust fan I would have the sticker facing out of the case and for my intake fans the sticker would face into the case?

Yes!!! Best thing to do is to pull out a few hairs and use them to test the airflow after you plug them in just to be sure though.

and then you have to balance the air flow and then you may want them filtered because the dust level inside the case can build up quick.

I've never taken much notice of balancing the airflow. A case is not going to explode if you take too much air in, now is it going to implode and turn into a vacuum if you have too many fans facing outwards. They are not exactly airtight even without fans. Certain configurations have been shown to make a minimal (1-2 C at most) difference to temps (I believe that prevalent thinking is that having more air coming out than in is slightly better) but it really makes very little difference. What's more important is that you place the right fans in the right place. Front and side should be intake, top and back exhaust.

In terms of dust, whack dust filters on if you want, many cases come with them anyway. All cases get dusty though, and should be cleaned (along with the heatsinks inside) every few months. Look for something called an "air duster" - it's effectively a can of compressed air, with a straw nozzle. It will blast the dust out of all the crannies, then you can wipe/hoover it up :)

All fans that I've ever seen have a little arrow on the side indicating the direction of airflow and direction the blades spin. Just make sure you have the arrow pointing in for intake fans and out for exhaust fans.

So I don't actually have to buy a fan that spins exhaust and a fan that spins to intake? one fan could do either depending on the way I put it in? Just making sure.

Correct, 1 fan can do either depending on its orientation.
