I'll try 1 and 2, I've heard Gothic 3 is absolute crap.
It's not exactly absolute crap. It used to be without patches but many of the major problems have been fixed. It's actually a better RPG than Oblivion.
Scaling ruined Oblivion. Completely.
How bad are the bugs in Gothic 3? I've heard that the combat was 100% broken.

Yes, the combat sucks but you can partly forgive it. Gothic 3 is a really mixed bag, you might love it or you might hate it. But while you play it, you can't stop thinking why Oblivion couldn't have this and this feature of Gothic 3.

Most of those really aren't what I'd call "open world" rpgs....

I agree. I was more thinking some games where you could do what you want, and do side quests instead of the main quest and get rich and ****
