Please could someone give me some help overclocking my E6750 cpu coupled with ASUS P5N-E SLI ATX nForce 650i SLI motherboard.

Download Orthos to stress your CPU and Intel's TAT (Thermal Analysis Tool) to monitor temps then head to your bios ...
I'm not sure about the 650i boards but if there like 680i then set your RAM and FSB ratio's to unlinked and start bumping the CPU speed up in 5-10Mhz increments. Boot to windows and run a short stress test while monitoring temps, if all is OK then restart and again bump the speed and repeat the stress tests. Keep this up until your start noticing things like Windows taking longer to load, freezing or crashing or any errors being reported while stressing .. if and when this happens then restart and bump the CPU voltage a little (say 1.3V). If this doesn't solve the errors then try bumping the voltage once more and again stress testing ..
If this doesn't work for a second time then it'll be easier to drop the CPU speed back .. Once you've found what seems to be a stable speed then run your stress test for a good 8-12hours at-least (the more the better) while keeping an eye on the temps (above 60°C odd should be avoided).
If it fails this test then either drop the speed or bump the volts (you shouldn't really go above 1.35 unless you know what your doing)

Im a bit of a newbie to all this, so:
I am setting the ration to unlinked in the bios and the same with bumping the cpu mhz and voltagei presume. I may sound dumb by writing this but, what is a stress test and were do i monitor the temp at ???

Yeh unlinked and then bump the CPU Mhz ... A stress test basically tests the CPU at 100% to see if its stable at its new speed .. Google 'Orthos' and download the program (sorry I can't just link you, not sure of the rules regarding that here) and then Google 'Intel TAT' and again download the program .. Install them and run them.
Orthos tests your CPU .. just click Start and it'll begin and TAT just shows the temperature of both cores of your CPU aswell as the speed its running at ...
Another program thats useful is CPU-Z (google and download that one too), all it does is show the speed and all the info about the speeds of your system.
Well you can usually overclock pretty far on stock volts and cooling but its best to keep your chip cool so i'd reccomend the Thermalright Ultra-120 Extreme or the Tuniq Tower ... both are excellent air coolers
