Do newer patches for games contain all the fixes of older patches for that game? Or do you need to install each patch and not just the newest one??

Yes. The latest patch should contain all the fixes the previous ones had. Unless you're talking about a fairly old game...those tend not to.

Most patches contain the previous fixes but not all do. Check the patch readme file for details.

Patches come in two flavors generally; comprehensive, and consecutive.

Comprehensive patches are often made for v1.0 games, or all versions of the game. If I loaded WoW, I could download a comprehensive patch to make it to the most recent version.

COnsecutive patches cover only small parts of a game. For example, if I had a patched version 1.5 of a games and wanted to patch it to 2.0, I would download the 1.5--->2.0 patch.
