yes u can transfer files from your old hdd easily it's almost exactly the same as sticking a usb pen drive in although you may find this harder if you had a windows password. You can do this internally (slave drive) or using a docker like you mentioned. If you had a windows password on the old drive you'll prob need to use a password reset software like trinity recovery.
