Recievers are made to handle video and audio at once.
They are the BRAINS of the home theater after all.
Plug all the components to the receiver and use component out cable to the TV.
Your receiver should have In and Out component ports, and optical in.
Connect the optical cable to the receiver, and set the right "MODE" on the receiver.
Well, let's start with a HDMI receiver to give you an idea of what you can go with.
If you had, for example, the Onkyo SR605/606, you could set it up like this:
Wii -- component/stereo --> receiver
360 -- HDMI --> receiver
PS3 -- HDMI --> receiver
Your receiver will be connected to your TV with 1 HDMI cable:
receiver -- HDMI --> TV
Instead of switching inputs on your TV, you will just change the input on your receiver. The receiver will process the audio and pass the video to the TV. Please note the example above assumes a HDMI receiver, if you get a non-HDMI receiver, then the setup will be different.

You can still get audio from HDMI by using a Toslink optical cable, just plug the audio optical cable from ps3 to reciever to get surround sound.
Hdmi is only going to give you video with your current setup. To get HD audio from HDMI you need a more expensive reciever.
To get surround sound from 360 you need another optical cable and connect that to receiver.
Your reciever should handle all the audio and video like it's suppose.
HDMI out port work for component? - No! Doesn't work. Hdmi out works for HDMI in only.
You can still get 5.1 surround sound but you need those optical cables connected to your devices to the reciever.
Your receiver will decode that to DOLBY DIGITAL 5.1 surround sound.
Read the manuals it's all in there!!! That's how I learned.
