I don't have much time to play video games these days. Are there any good RPGs where you can play in short bursts, then maybe pick it up again a week later without forgetting what you did earlier?

I played Fable in small bursts and completed it. I don't recall having any issues with it since the game was relatively linear. It's also not a very long game so it won't take you forever to finish.

Diablo 2 and Titan Quest have so many checkpoints/waypoints, within the span of 30 minutes, you're bound to run into/bind to at least three. Additionally, the quests are so linear, you'll have no problem getting to them if you should happen to forget where you're supposed to go. Guild Wars Trilogy actually just lets you teleport to any town you've been to at will. As for quests...well...the game will point you to where ever you're supposed to go and even highlight the area with a little glowing green star on your overview and mini map.

Dungeon Siege 2 was pretty good.
