Well if I had to pick one, I would have to go with Final Fantasy 7. Call me whatever you want, no RPG has come close to how immersive and spectacular that game was for me. However if we can name more, I could easily add Oblivion, Mass Effect, The Witcher, Final Fantasy 10, The World Ends With You (great game buy it!), and many more I am just too lazy to name them lol.

Yeah. I don't get the hate, it's not the best game ever but it's pretty solid once it's patched up and plays a lot like Gothic 3 so I really liked it.
Might and magic IV 1998
I love RPG's and it took a long time for another RPG to come out and rival it.
IMO, the tirfecta of RPG awesomeness is: Baldur's Gate II, Final Fantasy VII (though V is close), and Phantasy Star II. Screw the lame MMOs, the Phantasy Star series used to be top-notch stuff. Phantasy Star III and IV are pretty good too, but can't compare to how awesome Phantasy Star II was.
I haven't played it in years, but I remember having tons of fun with Strahd's Possession, an old SSI D&D game.
If for some reason you have not played any of the top 3 RPGs I mentioned, you should do yourself a favor and go play them. Now. Right now.
Vampire the Masquerade Bloodlines and Fallout.fatshodan
This^
Edit: Plus Morrowind, although I didn't realize it upon my first playthrough all those years ago.
