These games are what really brought me into gaming. I know they aren't hardcore games or necissary the best, but everyone should have played these.
Fallout 1 - For maximum RPG pleasure
Doom 2 - For the definitive shooter everyone else learned from
EverQuest: up through Velious - For the greatest MMORPG experience yet to be released
Age of Empires 2 - To show that games can be fun, easy to learn and strategic
Roller Coaster Tycoon - Because city building is so much more fun when you can bring it to life.

Personally, I think System Shock 2 is an acquired taste. It's game design at its most brilliant, no question about it, but as a game that everyone should play? It'd be hard for me to recommend it universally.
