FarCry 2 nailed a number of things, primarily immersion factor. You'd really get the sense of being out in the Sahara by yourself with a rusty old sniper rifle. There were always options in attacking objectives, and the game incentivized taking reconnaissance with the binoculars, marking down locations on your map. And the real-time brush fire effect made thins all the more interesting.
Of course, it wasn't perfect, with a repetitive main "quest" that was simply driving from point A to point B.
What FarCry 3 can do with an Antarctic setting is make traveling a more time consuming and demanding activity. Fuel will need to be a big factor when riding snowmobiles, and running out of fuel will not be a death sentence. You'd have to dig a burrow into the snow and pinpoint your location on a map in order to radio it to a rescue chopper. If it's too stormy out for a rescue flight, the only option is to wait it out in the burrow.Piloting a rescue chopper would be entertaining in its own right as well, having to rely on a survivor's description of his wherabouts in order to pinpoint his location.
The Anarctic setting might very well open up new gameplay opportunities. It's just a matter of what direction Ubisoft wants to build the FarCry IP from, at this point.
