So for my new gaming rig, I am getting this video card (http://www.tigerdirect.com/applications/SearchTools/item-details.asp?EdpNo=7092087&CatId=3669) and two of these monitors. (http://www.tigerdirect.com/applications/SearchTools/item-details.asp?EdpNo=7059353&CatId=5469) Later on, I am planning on running two of those MSI Radeon HD 6950's in crossfire and possible get a two more monitors but I then realized that the video card needs at least 500 watts. So if they were in crossfire would they be use 1000 watts? Also, don't forgot about the monitors too. So what PSU should I get then?

The monitor have their own power source so they don't count.

For two of those video cards a 750W should be plentiful.

No you wont need a 1K watt psu. they include other pc parts for power requirements. a good 850w willdo the job just fine http://www.tigerdirect.com/applications/SearchTools/item-details.asp?EdpNo=7027966&CatId=5434

Also if your tight on cash a good 750w would still do the job

No, the carditself only draw with load alittle over 255 watts, but when they recomend a 500w psu or what ever they are also including power need for the rest of the Pc.

Nope. When they say "recommended 500W" that doesn't mean that the card will use 500W. These requirements are inflated to compensate for **** PSU's and the rest of your PC components.
