Army Men - 3rd Person RTS (Think Section 8, but in gigantic maps ranging from a single Room, to a Mansion. Plastic fighter Jets and Choppers fighting in the dining room, large Scale PvP Battles ALA SW: Battlefront taking place in the toy room)
Aydin Chronicles: The First Mage (Better Graphics, better balancing, and chances for wounded status instead of always dead whenever a character is defeated would help, but besides that, loved the combat engine and story)
None in particular, although I don't mean to parade on anyone's hope for a remake. I prefer new IP's. :) Okay, okay. If I had to choose one, it would be Secret of Mana. Not necessarily a remake but a new SoM game would be cool. I really loved that game when I was a kid. I played multiplayer with a couple of my buddies and we had a blast. Multi-tap port FTW. :D
Age of Empires 1 and 2 in a 3D engine like Anno 1440. Soul Reaver Super Contra NFS 2,3,4, Porsche Unleashed and Underground 1,2. Just give the graphics an uplift, add some new cars and maps, and they're still damn playable.
Freelancer (a graphically updated version with some tweaked side missions so they don't feel so repetitive would really make my day) & Sacrifice (such unique and refreshing qameplay, I was really looking forward to more - a sequel, an expansion; a remake - if it stays true to the original - would also make my day).
Remakes? Quite a few, actually, that could do with a revamp on a modern engine:
Eye Of The Beholder 2 - as a 3rd person RPG Ultima Underworld 2 - as a 1st/3rd person RPG, perhaps using Gamebryo tech Betrayal At Krondor - as a 3rd person RPG, perhaps using the Just Cause 2 engine Heretic & Heretic II - as a 1st/3rd person Actioner using the latest Id tech Daggerfall & Morrowind - using the Skyrim engine Blood - on any modern engine Jedi Knight: Dark Forces II - using the Force Unleashed engine Blade Runner - as a 1st/3rd person action/mystery game using the latest Unreal tech Unreal (the original) - on the latest Unreal tech Half-Life - Valve should hire the Black Mesa team and complete it in-house Thief 1 & 2 - using whatever engine they're using for the next Thief game Outcast - using the Just Cause 2 engine System Shock 1 & 2 - using the latest Unreal tech Deus Ex (original) - using the latest Unreal tech Rune - using the latest Unreal tech No One Lives Forever - using Monolith's latest engine

That game was a good lenght though... considering TFU2 was 30 GB, I could imagine Jedi Knights being like 100 GB :P
I'd love to see Need for Speed High Stakes, Mechwarrior 2 or 3, Age of Empires II, the older Rainbow Six games (like Rogue Spear), Dungeon Keeper and the Myth series remade.
Dont get me wrong i love this game alot but now every time i take 2 steps i cant stop thinking of how the game changed, i am beggining to realise that the game i fell in love with back then is forever changed and i cant do anything about it, but i was thinking that day, what if they made a special kind of server dedicated to vanilla wow, where everything was how it was back before TBC, lvl 60 cap, no flying, ye-olden azeroth. Would love that.
Age of empire: First game i ever played, and i still love it but needs to be re-made again :D

BG or planescape torment: With more freedom, choices, quests, content., areas, 3d, same battle systems, more abilities spells, condition checks, classes, builds... Will it ever happen... No :(
