I quit WoW because it took up too much time and started to get a little boring, but I was at the level cap of 60 for a long, long time, and at 70 for a bit as well. The leveling is ridiculously fun on pvp servers if you get the expansion RIGHT when it comes out and you're not tard ganked by guys 30 levels above you. This is provided that your guild knows how to pvp. I remember not really enjoying my trip to 60 because I went with pickups for quests and soloed a lot, but if you're leveling as a guild, yeah it's fun.
You basically mentioned your other options. Raiding and PvP. I kind of enjoy both, but prefer PvP because items are not random and there's never a stupid guild point system of sorts that always seems to cause problems. The key to enjoying either is doing it with the same group all the time. People may scoff at you for not having a life, but lets be honest, very, very few people who are raiding are actually LIVING in the world of WoW RP style. It's like the Sims to most people, you just pimp out your avatar, and on the other side are real people that really end up being your friends and cool people to talk to. Problem with raiding is that it's annoyingly time consuming, and there's usually an attendance requirement of sorts since if you are part of a small group, you WILL be necessary.
This is why PvP arena's and group BG's are the better option. I recommend joining a dedicated PvP guild, as there is quite a bit of class balance and organization required to play PvP BG's and definitely arena's. Again, you have to play with the same people. I had a druid and WSG and that tower bg that i forget the name of was pretty fun. I was resto specced and with a rogue with poisons, we could beat pretty much any combo with good regularity except paladin + warriors. that was impossible, but patches may have changed that since i've quit.
What's stupid about WoW is that in the End Game, it's not anymore interesting than a conglomeration of a few cheap, but awesome multiplayer games like guild wars or TF2. Raiding is just doing the same thing again and again, and PvP is in its feel and whatnot similar to guild wars or any decent FPS, all of which do not require a monthly subscription fee, so in the end, maybe quitting is not a bad idea.
