Doom in terms of being ables to move around in a 3d like environment. But quake would be my first true 3d game i played with 3d enemies and being able to look up and down and aim.
I was tempted to say Wolfenstein 3D, but there was a game in the early-mid 80s that I believe was simply called "Jet Fighter". Strictly 4-color wire frame; the most memorable thing about it was the constant incoming missile alarm.
Of course, Wizardry also had a 3D element, monochrome wire frame dungeon walls. Good stuff. I was recently digging through an old box in the garage and found my original retail box for Wizardry. That was a cool friggin' box. Yes, I am teh Old Skool Gamorzz. (I've never written anything like that before. I feel cheapened.)
For me, on the PC it was Magic Carpet on my brand new dx4 100mhz that cost me £600 & that was cheap cos my m8 got staff discount on parts at his job & built it for me. Not long after, Doom arrived.IMP_ACT

Yeah, you gotta be caerful here cos lotsa these games weren't really 3d. Afterburner for example was rows of 2d trees /buildings etc' just scrolling forward & the planes / 'copters / missiles were just sprites. Looked good enuf at the time but not true 3d. Many racing games looked 3d but weren't (eg Outrun, also Sega).
True 3d has 3 dimensions. That means you can turn round (or look behind) & see the back of buildings, objects or characters. Or go under / over objects and see that side of it (depends on game). If you see a barrel you should be able to walk(or fly or whatever) around it and see all the sides, not just the front & back like a lot of 2d games (tryingtrick 3d)did.

For me it would be this old-school f1 racing game... atleastthemap was 3d and in4 colours (2 for road,1 for grass, 1 for background),i dont remember about the car... anyways that was also the first game i ever played...Edziscs
I can't remember...but it was definitely something on the N64.
The first game I ever played that gave a 3D effect would have to be the arcade game Battlezone in 1980, then maybe the Original Star Wars Arcade game in 1983.
The first 2.5D FPS that most people consider 3D would be Castle Wolfeinstein 3D 1992, some other 2.5D games were Ken's Labyrinth 1993, Doom 1993, Doom2 1994, *Magic Carpet 1994, Hexen 1994, Rise of the Triad 1995, Descent 1995, SW Dark Forces 1995, Strife 1996, *Duke3D in 1996 did the best job simulating 3D until Qtest1.
Imo Qtest 1996/Quake/VQuake/GLQuake/WinQuake was the first true 3D game, where you could actually walk around, over and under an object and see all of it's dimensions and architecture instead of seeing a sprite image rotate as you moved around it, to give an effect of 3D.
Star Fox on SNES - 1993. (I first played Wolf3d and Doom on SNES also)
TronX - I would consider Wolf3d (and most FPS games) 3d because you have full control of the movement of your character (forward/backward/rotation/sliding/aiming) within the environment - even if the characters/objects within the confines of the designated area are simply 2d sprites.
Harden_hawk - Forsaken was very nice for lan/deathmatch - like Descent on steroids.
