university (which you have) is solid. it gets the new lifetime stage, the ability to have one more desire thingy (that spins around and all that), and lets you have better starting jobs and stuff.
nightlife is very key, it adds cars, the dating thing, and a new area to explore
open for buisness is very hard. it adds elevators, new ways to make money, new items and stuff, but i didn't like it that much. you also get a new area, bluewater villiage, or something like that. more NPC sims and so forth.
pets is, well, pets. you get another family member, but you don't have direct control over it, and need to buy a lot of new stuff for your house/dedicate alot of time to training it with a reward system. (hello b.f.skinner?) it is fun, and adds pets, so you are getting what you pay for.
seasons (i didn't get this yet, haven't gone to the store) gets you different weather, different sim reactions to the weather (inappropiately dressed, etc), and seasonal activities (gardening, fishing, snowball fight, etc)
I would get them all, but if you can only get one, i recommend Nightlife.
