On my TV, using component cables, 1080i produces a slightly grainier image (at least in Ghost Recon: Advanced Warfighter), so I use 720p.

Neither is really better.  Here's the deal.  Like Kodai said use what matches your native res.  If you have a CRT based HDTV you should use either 720p or 1080i whatever you prefer.  Most CRT display 1080i content properly but i've had users of these displays tell me that the image, especially text, is not nearly as clear due to the flickering of the interlaced signal.  All other HDTV's should use either 720p or 1080p as the screens are progressive and using a interlaced signal requires the tv to further process the signal unnecessarily.

You can use both, BUT what does your tv DISPLAY in the end?

I mean if your tv is 720p there's no point in picking 1080i since it would be downscaled to 720p, giving you no benefit from it but only it's con, which would be a limiting 30fps, while if you picked 720p, it could have been a full 60fps.

So what is the native resolution of your screen? And whatever that is, that's the best option to choose.

ALSO, someone above said to see what looks better on a CRT, but most CRTs out there are only 1080i, sure there's no physical native resolution to a CRT, but they have their limits, such as only being able to do 540 progressive lines or 1080i, they'll accept 720p, but it will have to be converted to something else as only some rare old CRTs actually could dispaly 720p.
