Burnout 3 was great! I'd also pick Project Gotham 2 on xbox and Rallysport Challange 2 on xbox (the xbox was loaded with great driving games). Also on Gamecube: F-Zero GX, just for its extremeness.

Ditto, but just best racing game. Super Eurobeat is pure sex too, and the game has cool music. Also, Initial D is the only cool Anime IMO, thanks to the music.
