(Odd, I replied to this earlier, but it doesn't show... hope it doesn't double-post...)
If you are using the standard composite A/V cable to connect your PS2 to your HDTV, the first thing you can do is get a set of quality PS2 Component cables, assuming that your TV has a set of Component inputs available to use. That should improve your picture quality overall, and allow you to use Progressive Scan (480p) in those PS2 games which support it, including God of War 2, of course.
Once you've hooked those up, make sure you enable progressive scan and/or 16:9 widescreen support when playing a game that has those options, as per the link above. The 16:9 mode in games will format the picture in such a way that it looks good when expanded horizontally to widescreen, so when playing a game in that mode, you'll want to switch your HDTV's picture mode to Full, or Wide, or whatever your TV calls the mode which will expand it to the full width of your screen. Some TV's pick this up automatically, but most don't.
Also, take some time to adjust your TV's video settings for the input your PS2 is using. Many HDTVs now allow different configurations of settings for each input, and if yours does you can experiment with the settings for the PS2 without affecting your other inputs (live TV, X360, etc.). You may find that by tweaking some of the picture adjustments, you can really improve the way your games look to you. The PS2 isn't true HD, but those steps should help your games to look at least as good to you as they did in the store.
