There are a few soundtracks that stand out in my mind. FF always had grat soundtracks and I still play Zanarkand from FFX to this day quite often. Shadow of the Colossus us another one with a great score. You also have Digital Devil Saga and Persona 3 which have some really great tracks in there.
Well, the obvious ones that evolve around music: Guitar Hero games, Def Jam Vendetta, etc.. and other than that I would say the EA games: Need for Speed, NBA Street, NFL Street, etc... and thenthe games that have a soundtrack that goes along with the game are pretty cool like God of War.
