USB keyboard, headset, upload pictures off your camera for some Monster Rancher game, save pictures for GT4, PSP connectivity and third party hardware.
USB mouse also works. Try it for FPS's. I know it works in FF7: Dirge of cerberus (in addition to USB keyboard). You can also use the keyboad for typing in names in the rosters in NCAA football.
I've only ever used the a USB slot for plugging in a camera in for 'Eye Toy' games but I know that you can use it for other things like USB Keyboards and Headsets.
