I would also say Shadow of the Colossus. The Hair and Fur are awsome, as are the animations and the textures. I didn't think that was possible on the PS2. Resident Evil 4 doens't score bad either. Great models and textures there!
Hmm, Final Fantasy 10 had some of the coolest cinematics I've seen on PS2, and the pre-rendered backgrounds were awsome, but I wouldn't call it a winner.
I was really impressed with the graphics of Resident Evil 4, it appears they managed to make full use of the PS2's capabilities and it shows. The level and character design complemented the story incredibly well.
As for GoW, in terms of no.1 i thought the graphics were sh1t house when i first played it as the the enemies on the boat looked like toy figurines, how there arms were joined to their torso with a ball joint, but i was pleased when the graphics improved after those crappy enemies and better environments were found, as for no.2, don't got it can't rate it. IMO SotC, and, RE4 and the MGS series all have awesome graphics, though graphics isn't the most important thing to me when i play games.
