Hm, 5 titles which have never gone multi-platform, and which exemplify the PS2 experience for me. That's actually more difficult than I first thought.
Yes, I cheated on the last one, so pick whichever one is more to your personal taste. The point is that those two actually represent many games -- too many to list, in fact. But without a doubt, the selection of amazing, sometimes quirky and lesser-known, yet incredibly high quality Japanese RPGs like these 2 titles are a vital part of what defines the PS2 as a console for me, and sets it head and shoulders above the other platforms of its generation.
*It pains me greatly not to put Devil May Cry 3: Special Edition on that list, but it was technically also released as a port for the PC. Hardly the same thing really, but that eliminates it under your criteria. If it weren't for that fact, I would likely substitute DMC3 for God of War in the list above, as it did much of what God of War does, only with more innovation, depth, challenge, and sheer over-the-top wackiness.
I would also submit that the Grand Theft Auto series really is part of the defining foundation for the PS2 as well, even though the runaway success of the games eventually led to them all going multi-platform.
Do not get God of War. I cannot stress that enough.
