Although not quite the same as Katamari, I'd recommend you take a look at LocoRoco or Loco Roco. I do believe there's a demo of the game somewhere (use google).

the demo for loco roco would be found in the floating demo thread in the psp forum and yes Jorlen is right, there is really nothing like katamari
