The first game that comes to mind is heavenly sword, which had you shooting arrows in slow motion directing them with sixaxis into the head of an enemy. Probably one of the most awesome things i ever got to do in a game.
Killzone 2 did a good job with it. When sniping you have to hold the controller perfectly still, if you move the sixaxis registers it and the scope shakes, among other ingame uses.
