Valkyria Chronicles is very hard but not too bad. I got rid of it after getting a few hours in and kept dying on a level that after about 30-45 mins of play some seemingly invincible player who could whizz round at high speed just annihilated everyone I had left. A few tries of that with the amount of tedious play time to make up those 30-45 mins again every time just made me completely fall out with the game. It's not bad, but I don't consider it a proper JRPG in terms of what I expect from the genre, it's a strategy RPG with no exploration. Cut scene, strategic battle, win battle, level up characters/weapons, cutscene etc. The battles are generally very fun and it has a unique art style that a lot of people love (though personally I don't). What I saw of the story bored me, personally, but that's probably just down to personal taste on my part. Disgaea 3 is a grid based strategy RPG, but an extremely good one that I'd totally recommend. Again, it's not FF-ish in any way shape or form, but a great game for what it is and it's pretty funny.
To be honest, Star Ocean 4 is the best traditional JRPG I've played on the PS3, Eternal Sonata did nothing for me, FFXIII was mediocre at best. With Japanese audio and English subs Star Ocean was far more bearable in terms of dialogue and as you say, the exploration and battles are really fun. Quite liked the story and most of the characters, although I can see why a lot of people wouldn't. After playing through P3P and watching a load of Persona 4 on Giant Bomb I'm hoping Persona 5 comes out on PS3 at some point fairly soon.
