It has to be games avaible on PSN.
RE2 is an awesome game. It was the first Resident Evil game I played, and it caused me to fall in love with the series.
If you like mini games I recommend trying Konami's Bishi Bashi Special is worth getting not sure if it's on the US store but I know it's on the EU store.
Dang-near survival horror perfection (the top honor of course going to "Eternal Darkness: Sanity's Requiem" on the GameCube). Buy it immediately. Play through it with both characters... Racoon City was never better, pinnacle of the series.
Better than "REEL FISHING". And those who know me know that's a ringing endorsement.
:D
But in all seriousness, if you want a PSOne game that's a really good one to get. Others I have purchased (on the US PSN, mind you) and like a lot are:
"Syphon Filter", "Legacy of Kain: Soul Reaver", "Crash Bandicoot", "DinoCrisis" (the worthy CAPCOM successor to the RE series), "Metal Gear Solid" (still one of the most impressive games to ever be published), "Silent Hill" (who needs re-makes and re-boots? Get confused with the original), "Twisted Metal 2" (car combat perfection), "Pandemonium!" (acid-soaked platforming awesomeness), "Ten-Pin Alley" for bowling and "Backstreet Billiards" are excellent sport sims with wonderful physics modeling, "MediEvil" for fetch-collect action, any Command & Conquer title on PSN though I think "Red Alert" has a save function which the first game in the series does not, and last but not least "Nuclear Strike" is a good top-down military helicopter combat game...
... did I mention "REEL FISHING"? I like that title too, as a cool-down, mellow, laid-back alternative to the fast-paced world of shooters and stuff.
I have not played any of the RPGs like "Wild Arms" or any of the rest so I couldn't tell you anything to follow up your love for "Final Fantasy VIII", perhaps someone else can talk about those?

If you loved Final Fantasy VIII, you'll most certainly love Final Fantasy VII. Which, in my opinion, is a better game. However, Wild Arms is perhaps my favorite PSone classic available on the PSN store. Its story is somewhat generic, but makes up for it in its combat and simple, yet challenging, puzzles. And has a unique, wild west theme to it. Check out both, but I'd suggest Wild Arms.
