Can I use a HDMI cable for video and a standard AV cable for audio at same time?

That way I can have HD visuals but take the audio through my amplifier instead of my TV.
Or is there any other way I can achieve this result?

Yeah, you can choose separate audio and video output sources for the PS3.

Yeah, I think there's an option to choose audio output source, and there's HDMI, Composite/component, and optical. I think. It might also show up twice, again in the Blu-ray section where you can choose dialog enhancement and audio type (ie, PCM).
