You could have found this out with a quick forum search, ya know. :P

Folding@Home is a project run by the Stanford University medical research team, who are looking for breakthroughs toward cures of several diseases such as Parkinson's, Alzeimer's and several forms of cancer.

The program runs on your PS3 when sitting idle (no game play, movie watching, etc.). They send the system a "work unit" which simulates the folding of various proteins (hence the name). Once the unit is done (takes about 8 hours for a full work unit if left alone) it will send the results back and another work unit gets sent down.
