The PS3 cannot play Blu-ray discs at 720P. It plays them at 1080P, 1080i, 480P and 480i.
1080i is better for Blu-ray than 720P because Blu-ray media is usually 24 frames per second, meaning it is already displaying fewer frames than 1080i supports at 30fps, and 1080i is 1920x1080 instead of 1280x720.
720P is preferable to 1080i for games because of the ability to display 60fps rather than 30.
If your display supports both 720P and 1080i just activate both resolutions from System Settings, Blu-ray and 1080P games will play at 1080i and 720P games will display at 720P.
