Can't Kill Hermes!!! Help!!!

I'm at the part where you have to pick up hermes and slice his first leg off.

You have to block an attack to do this. I CAN'T!!!

I tried for 30 mins to block it and can't.

Maybe I'm doing it all wrong, how do you block it! I know you use L1 but at what moment?

What does that little arrow thing mean?

Please help I want to keep playing this awesome game!

Not L1, when you see the arrow move the left anolog stick to that direction.
