Are you using an HDTV? If so, you're going to want to go with HDMI (all 1080p TVs accept up to 1080p signals from this) or component cables (some 1080p TVs will accept 1080p, but most will only accept up to 1080i). HDMI is preferred.
Use composite if you're using a stardard definintion TV.

Agreed. Plus on top of that, the PS3 can upconvert dvd to near high definition. It can upconvert PSOne and PS2 games the same way. But you're going to need an HDMI cable in order to do it.

You can use component too, I believe.
If your tv supports HDMI go with that. Composite will give you an inferior version and quality of image in comparison to hdmi.navigata
NOTE: Composite is for 480i.
Component will give you 480p, 720p, 1080i, and sometimes (depending on your TV) 1080p.
