Try and import the Asian version. It comes equipped with English voice acting and English menus. It's a pretty cool game albeit a little difficult. The only downside to the Asian version is that the manual is all in Chinese with only a small English insert as a guide. There should be a good amount of resources on the internet though.
Demon's Souls is developed by From Software a Japanese low-budget company and published by SCE, presumably the Japanese branch in Japan. There has been reports cited by some American websites claiming it was released in other countries such as Hong Kong, Singapore and that it had english subtitles and english items (cash, armour, potions). Presumably From Software or the publisher were not expecting much popularity or a so-called 'hype' for this game. Thus, made and shipped limited copies throughout Japan in Feburary 5th which was the release date. Suprisingly, days later all Japanese game stores and presumably other stores that sold this game had it cleaned out.
As of now, there is no official announcement from SCE Japan regarding a Western release. Western gamers that are interested and would like to obtain this game could purchase it off play-asia or ebay stores but play-asia is reported to have ran out of stocks due to high demand. The alternative option is to wait for it's official announcement to be released in Western countries. In addition, trophies have reported to be in Japanese writing unlike the items which are in English.
