Does the age of the PS3 have an effect on it's performance?

I have an old "fat" PS3 that I have had for several years and i am noticing that it's freezing up more often. It freezes almost once a day when I play New Vegas (but that might be the games fault) and occasionally while playing other games like AC and CoD. Is it the games' or my PS3's fault and would getting a new one make it better? The fans aren't always on so I don't think its overheating.

No. 'Fat' and 'Slim' PS3 system play games equally.

New Vegas is broken glitch video game that shouldn't be released in such state in the first place.

Anyway, I have a slim PS3 and it even freezes sometimes. However, upon inspection it is usually because of a fingerprint on the game or something, and not the actual PS3 itself.

I personally don't like any of them. I tried Fallout 2 and disliked it. Then when 3 came out I decided to give it another chance, and I played about an hour or two of it and never played it again. They just don't interest me I guess.

Funny thing is, when the slim came out, there were measurable performance differences on various tasks, because the sharply revised variance of the chips between the old and new console meant that certain bits of code would also process differently too. In short, some tasks were faster on the slim, and some a lot slower at the slim's launch. No doubt Sony has paid attention to addressing that in firmware updates as well... Just would wish that Sony would be a lot more forthcoming about what's IN a firmware update besides giving vague descriptions or only up-talking about new features they put in. Ideally I'd wish they would have a section in their release notes specifically about "known issues" with firmware releases.

No I have both a PS3 "phat" 60 giger and a PS3 "slim" 120 giger. They both work fine without any troubles thus far. The performance is how well you take care of your systems. Mine are well ventilated so to avoid overheating. Which is the main issue on PS3.
