HDMI (best way, gets you 1080p)
Component (green, blue, red) (great connection, gets you 480p, 720p, 1080i, and i think sony's brand said it can do 1080p on some TVs)
Composite (yellow, red, white) (standard A/V connection, gets you 480i)
S-Video (a small step up from Composite, gets you 480i)
VGA/RGB/computer connection (kinda in between Component and HDMI, get you 1080p but the colors may be washed out and a lot of TVs only support VGA at 720p) good if you're using your ps3 on a computer monitor
Coaxial (one step down from Composite) (gets you 480i, its the standard 1-plug that people use for cable tv that you screw into the back of your tv, outdated kinda)
EDIT: There is also DVI which is one step down from HDMI but I would just stay away from it since its becoming outdated and its actually pretty confusing.
