i think the temple knights with the armor they start with and a healing spell they are a great starter class

Best class for noobs is Royalty hands down.

Knight.

Heavy armor + good starting sword and shield.

Balanced stats that let you take any path you want (magic, faith, etc) with little effort.

Royalty is THE class for your first playthrough, although to be honest it makes the experience kind of boring. I went with thief, myself, and armed her with a spear. Spears are also kind of an easy mode, but not quite to the extent of just spamming low-level magic spells all the time. I'd avoid any class that starts with heavy armor and doesn't let you roll at the quickest speed (I think half of your encumberance is the limit for that). Dodging is much more important than armor in Demon's Souls, and heavy armor makes you move like a turtle.
