I am just a bit thrown off by the date since sunday is 31 Aug and it says preorder ships that day, just curious if Gamestop most likely already has the game and will sell starting tommorrow
Calling Gamestop would probably be your best bet just to check with them. I've noticed however that all of the adds say specifically, "In Stores Aug 31st" So... yea, your guess is as good as mine at this point.
Some stores will have it on their shelves tomorrow, but "usually" when a game ships out, it's being delivered on its release date and stores like Gamestop, etc, have it ready to go the day after. The Walmarts and Best Buys in my area usually have the games on their shelves the same day they are released. Give your local gaming shops a call and ask them when they plan on having it on the shelves to make sure.

Yes, most stores have the game in already and can't sell it until Sunday.
