For example i have bought a 320gb HDD for my playstation 3, as i used all the space up on games, and i didnt want to delete the game saves and data because i always play a different variety of games. Im not one of those people who play one game for a month straight, i like to play a bit of everything. Not only this but the fact that my ps3 is jam packed with music, videos and pictures, which i have saved onto the hard drive for easy access. YES i actually use my PS3 as a mulitmedia system lol
Oh and i forgot to mention the people that have linux installed on there ps3's, this uses up space too.

Also about the different models, other than the backwards compatibility, media card reader and extra usb ports (which are no longer available) there is no need to worry about the size of HD that comes with the system due to the ability to upgrade very easily and cheaply. I personally bought a 40gig then bought a 250gig HD for $70 which saved me $30 and gave me 170 gigs more space than if I would have bought the 80gig model.
It stores Media and information that you want. Sometimes somepeople have a lot of things they want on there HDD so they obviously need a larger storage space, for instance i have a 320gb HDD in my Ps3, 100gb of it is dedicated to just Movies and other videos.

Its quite easy to do, just take off the small cover on the side of the ps3 with a screwdriver or knife, then remove all the little screws (be careful not to strip them) then slide the HDD out.
And no it doesnt void the Warranty either.
