Not really worried if it's the ear piece or headset, I'd prefer the best quality as far as them hearing me fine and vice versa. Any input as to which one matches that, I would appreciate it.

If you have a lot of cash get the Turtle Beach PX 5
They are quite expensive but they are one of the top headsets for the PS3. It's great for FPS games and they are pretty kickass.
If you want to use less money get the Turtle Beach PX21. These are nice too but don't offer the same features of the PX5. They are much cheaper though.
