The retail version of BF:BC does not support trophies, you have to update the game to be able to collect trophies. You can check if the game's trophyset is installed by going to the trophy-section of the game-section. You can get trophies offline and they unlock during the game, depending on how the devs programmed them into the game
It's wise to be online so that your trophies will be backed up. Also, I don't know of any games that support trophies out of the box. You usually have to update them.

Wrong. Afro Samurai and Agarest generation of war released in 2009 here in EU and they do NOT support trophies

You won't lose trophies for not being online, so I don't know what you mean by being backed up. Although you do have to be online to update your profile so that you can see how many trophies you have because Sony still hasn't made it so that once you get the trophy unlocked it automatically updates your profile sadly.
