Now to the lucky one with a PS3 you know there have been several updates. This list about updates will be updated when more updates are released.
Just to let you know, using PSN when you download one update and there is a firmware difference then it downloads all the firmware you are missing.

Firmware 1.00 -
Description:
This is the original firmware running on a store bought PS3.

Firmware 1.10 -
Description:
- Enables Playstation Network, and Playstation Store
- On screen keyboard in English and European languages
- Option 'Audio CD Output Frequency' has been added
- Option 'Enable ATRAC' has been added
- Option 'Cross Color Reduction Filter' has been added
- Allows option for screensaver to come on after 5 idle minutes
- Option 'Full Screen' added while playing video files
- USB storage enabled
- Ability to download content of the web browser
- Simplified and traditional Chinese characters can now be displayed in the Internet Browser
- Online Instruction Manuals has been added as a feature
- The method of calculating hard disk capacity has been changed
- Playability status with the system has changed for some PlayStation and PlayStation2 format titles

Description:

Firmware 1.30 -
Description:
Video output Settings change concept.
This update changes the default output signal to the highest the screen supports. This prevents the user to prefer any particular resolution, you can however disable the resolution you don't want to use, such as if you prefer 720p but your TV supports 1080i, you can disable 1080i manually in the system settings. This however downscales Blu-Ray "Movies" not games, to 480p instead of 1080i because the user disabled it. At this time Blu-Ray does not run at 720p. Gamers who prefer 720p and watch Blu-Ray can switch the 1080i support when they want. Owners of 1080p or 480p TV's do not need to worry. Fixed by Firmware 1.80.
- Enables a Blu-Ray remote control via Blue-tooth.
- Option 'BD/DVD Video Output Format (HDMI)' has been added.
- Feature 'Backup Utility' has been added.
- Options for formatting HDD were expanding.
- PS2 USB devices such as the 'Eye Toy' are now supported.

Firmware 1.31 -
Description:
Support for Games that use a HDD feature most notably Final Fantasy XI, while the actual download in the Playstation Store appeared several days later.

Firmware 1.32 -
Description:
This update strengthened the networking of the PSN. Some reported generally faster log-in and download speeds.

Firmware 1.50 -
Description:
MOST IMPORTANTLY They have fixed the Graphic Problem when displaying 480i games on a HDTV. Repeat, PS2/1 games look Great on PS3 in HD! While the game is still slightly pixelated it is because it is still SDTV content in HD, but it looks much better then before. Games such as MGS3 now look good instead of bad. Lets Rejoice!
- User picture in log-in may be replaced by one saved on HDD.
- Support for Card Reader for PSN Cash Cards.
- Korean language now supported for keyboard.
- Key tone option.
- Delete backup utility option.
- WEP 128, WPA-PSK and WPA-PSK have been added as security methods.
- Saved password feature and auto-log-in are now two separate features.

Firmware 1.51 -
Description:
Information on this update is scarce, saying officially: New for 1.51: Support for PLAYSTATION®3 format software titles has been expanded.Sony
This may mean alot of things from support for upcoming PS3 games or just upgrading tweaks. Apparently though that it fixes a Blu-Ray movie freezing error caused by 1.50. This is not official though.

Firmware 1.54 -
Description:
- Screen Mode has been added to video chat.
- Any USB compatible video camera can be used for video chat. (Theoretically X360 Vision Camera would work)
Screen mode is the ability to change the video chat from full screen to smaller, and the ability to zoom in on the picture and other visual enhancements. For more info about screen mode click here.

Description:
- Remote Play to any 20gb model that is connected to a modem that also supports wireless.
- An on screen QWERTY keyboard as an alternate option.
- Zoom function on web browser.
- Support for Stanford's Experiment Folding@Home.
- Optional disc auto-start.
- Support for Rewritable Blu-Ray discs.
- Support for Blue-tooth Keyboard and mouse.
- "Players Met" now working.
- Expanded Avatars
- WMA enabled.
- Resolution Settings for web browser.
- PS3 now automatically selects the display cord set-up. (i.e. HDMI, Composite)
- Danish, Norwegian, Finnish, Swedish, Chinese (Simplified) and Chinese (Traditional) have been added as options in [System Language] under [System Settings].
- You can now restore backed up data to another PS3TM system under [System Settings] > [Backup Utility].
- You can choose character sets (fonts) under system settings.
- Support for playback of DSD (Direct Stream Digital) discs has been added. *These discs are music discs created using Sonic-Stage Mastering Studio Version 2.1 or later or DSD Direct Version 2.0 or later (both Sony products, sold separately).
- Motion JPEG and AVCHD (.m2ts) have been added as playable formats.
- Small Visual tweaks send messages.
- New Chat Icon under Friends.
- Ability to select particular Friends to send messages to, or chat to from a list.
Background downloading is now enabled. Users will be able to download up to six item in a queue. A new icon labeled "Download Management" will appear on the cross media bar under "Network Management". While downloading users will be able to use all media features of the PS3 including playing games. if the user tries to play online the download will simple pause then resume when the user is finished.

Firmware 1.70 -
Description:
- PLAYSTATION games downloaded from PS Store are now playable on PLAYSTATION 3.
- Save data from PLAYSTATION software can be transferred and used on PSP.
- Vibration function is now enabled for PS2 and PS1 software on PS3. Using controllers for PS3 with rumble features.
- PS3 compatible PS1 games will be available some time in May.
- Several USB PS2 controllers such as driving wheels have gained the ability to be compatible with PS3.
- Backwards Compatibility has been upgraded for European PS3's.
- RUMBLE FEATURE is back for PS2/1 game. All that is required is a PS2 controller with a usb adapter. Available at almost any electronics store.
- Expanded backward compatibility in European PS3's.
On a Interesting note, like the PSP you can now view what each update does during installation.

Description:
- Resolution change static flickering has been fixed.
- PS3 freezes less common.
These are fixes or tweaks that flew under the radar and it is not known from which update they came from. Maybe you can solve a mystery.
