I think that Socom is the most popular if your looking for playercount. It's usually in the 4000's-5000's, not counting the other Socom games it shares the server with.
Medal of Honor Heroes are really good too, except people abuse the voting system, they will vote you out just because your winning. So consider that.
Killzone Liberation is also good, but I don't think it has a lot of player left.
