The PS3 gives you the ability to create 'virtual' PS1/2 memory cards; this allows it to recognize a card in the game, but it's still saving to the hard drive. PS1 games still require a PS1 memory card to save, but in the case of the PS3 you just have to create a virtual PS1 memory card, and the same with PS2 games.
The only time you need an old PS1/PS2 card is if you 1) have old saves you want to carry over onto the PS3 (which you'd also need a memory card reader to make the transfer), or 2) want to take your saves onto a card to take to somewhere and play on an old PS1/2 (need the memory card reader for this too).

In order to save PS1/PS2 files on a PS3, you need a 60GB or 80GB PS3. Or else, with the 40/20GB PS3, you cannot play PS1/PS2 games and regular DVDs (I think) and I know for sure you can't save PS1/PS2 files on a 40/20GB PS3. I hope you read this! :)

20gb PS3 - plays PS1 and PS2 games, plays DVD's and Blu-ray + CD's
40gb PS3 - plays PS1 games, plays DVD's and Blu-ray + CD's
60gb PS3 - plays PS1 and PS2 games, plays DVD's and Blu-ray + CD's
80gb PS3 - plays PS1 and PS2 games, plays DVD's and Blu-ray + CD's
